Ebiripo: one of the best Ijebu Food

In spite of the fact that most of the Ijebu foods are tuber-related such as Ikokore, Ojojo, Ebiripo etc, the process of cooking these tuber varieties with special sauces makes them nutritionally rich and appropriate for all occasions. Ebiripo is a typical Ijebu cocoyam meal that can be cooked in various ways and spiced up to make a balanced diet. Cocoyam is purely carbohydrates and poor in other nutrients but many have now found ways to make the roots nutritious by adding soya beans while making Ebiripo. According to a study by Sowonola O. A. Et al, from the Federal College of Agriculture, Moor Plantation, Ibadan, Oyo State, “The combination of cocoyam and soyabeans in the processing of Ebiripo will bring about nutrient complement ability”. They submitted in their findings that Ebiripo fortified with 40% soya flour was significantly 28% higher in protein and 8.4% higher in fat than the other Ebiripo samples. Okro Soup also know as Ogbono soup.

Ogbono Soup also known as Draw Soup makes eating Fufu Recipes so easy because of its slimy nature which helps the lumps of fufu slide down. Preparation method assorted meats (oxtail, tripe Pomo &bush meat) ground Ogbono seed ground crayfish-  ground pepper iru- 1 medium onion palm oil 3pt stock or water Salt Method: a)Wash the assorted meats thoroughly and place in a pot. b) Add the sliced onions, galic, ground chilies and some stock or water. Cooked for 30 minutes c)Add the washed smoked fish and stockfish, cooked a further 10-15 minutes adding a drop of water or stock as needed to stop it from burning. d) In another pot, heat the oil and fry the ground seeds for 3 minutes to bring out the nutty flavour. e) Gradually add the stock and whisk until it draw and bubbles. f) Add the cooked meats peppers and crayfish. g) Dissolve the locust bean in a little stock and add to the soup. Yam Pottage (Asaro)

Asaro – Yam Pottage. It is a very popular Nigerian mashed Yam and Tomato stew infused dish. You can either prepare your  Yam pottage very mushy or you can have it part mushy. You can choose to add vegetable to your Yam Pottage or have it without, this recipe shows you how to prepare both. Don’t be perturbed by the exhaustive list of ingredients, most of them are optional. Yam pottage can still be enjoyed without adding proteins,  rich and natural flavours of smoked turkey and dried stockfish in yam pottage, hence the inclusion. If you don’t already do this, you really should. Also, you don’t have to depend on using palm oil, vegetable oil is just as good, if not tastier. Ofe Akwu : Anambra food.

Unlike the Urhobo Ofe Akwu stew called Banga, which is mainly used as soup for starch or eba, the Igbo Ofe Akwu is best served as stew for boiled white Rice. Today’s recipe entails how to make Ofe Akwu stew. Ingredients 1. Fresh palm fruits or 800g tinned palm fruit concentrate 2. 1kg of beef cut into medium sizes. 3.  #200 pieces of dried fish (mangala) 4. Scent leaves 5. I onion 6.  #100 handful crayfish 7. Habanero pepper to taste 8. Salt to taste 9.  small piece of Ogiri Okpei 10. Seasoning cubes Akwu (palm) seeds are the major ingredients for making this soup. Ikokore : An Ijebu Food

Ifokore, is a Yam Pottage dish made with Water Yam  not White Yam. It is a pottage recipe from the Ijebu people of Ogun state and ijebu from Lagos state , Nigeria. I’m yet to come across an Ijebu person who doesn’t love Ikokore,  Ikokore remains a staple in an ijebu household. To really enjoy Ikokore, you’ll need to incorporate as much proteins as you possibly can to enrich it. Your best bets are Shaki, ( intestine ) Ponmo, Chicken, Goat meat, Gizzard, Smoked Turkey, Smoked Fish, Panla, Eja Kika, the more the merrier. The authentic Ikokore recipe requires no blended pepper, it calls for just Scotch Bonnet (Ata rodo) and in some cases, dry ground pepper but I’m not too keen on hot and spicy dishes so I settle for Shombo. Nigeria is a blessed country. We are blessed with diverse rich culture and food. Nigerians both at home and the diaspora always love their food because of how unique and delicious it is. It is called Sunday food by most people because although people prepare rice and stew on a normal day, it is most commonly prepared on Sundays. The rice is boiled white and served with stew made from tomatoes and other ingredients. I did a research on how different people prepare stew and it turns out that there are different ways of making stew. But 70% of Nigerians prepare is with tomato, onion, vegetable oil/palm oil.
